Gluten Free, Wheat Free, Egg Free, Nut Free, Dairy Free, Vegan
This is a great breakfast option especially if you are busy and just want to grab and go! I had heard of so many people having overnight oats and frankly I wasn’t sure that I was going to like them. The thought of uncooked oats made me dubious about them! However, I gave them a try and my goodness was I converted! They take 2 minutes to prepare and then you just pop them in the fridge and they are good to go the next morning (or after a couple of hours!).
50g Oats (use gluten free if required)
10g Chia seeds
180g Greek yoghurt (use coconut or almond for vegan/dairy free version)
100g Almond milk
10g Honey (or agave/maple syrup for vegan version)
(You can also add some peanut/almond/nut butter for additional flavour)
1) Add the oats and chia seeds to a container.
2) Add the yoghurt and almond milk. Stir to combine.
3) Add the honey (and any additional extras eg nut butter/vanilla extract etc). Mix to combine.
4) Leave in the fridge overnight (or for at least a few hours) to set.
Top with your favourite toppings and Enjoy!
(I topped mine with almond butter, raspberries and some bee pollen)
