Spinach with Avocado Dressing

This is so quick and easy to make. I don’t even feel it counts as a recipe because you only need 2 ingredients! It tastes great, looks great, has great health benefits. Spinach contains vitamins, minerals and antioxidants while avocado is a great source healthy fats. It can be used as a side for breakfast, lunch or dinner with some meat, fish or eggs!

Ingredients:
(Serves 2)

2-3 Large Handfuls of Spinach

1 Avocado

Sea Salt

* Note: It can be made for a single serving by using half an avocado and 1-2 large handfuls of Spinach

Method:

1) Place the spinach in a large mixing bowl.

2) Remove the skin from the avocado. Mash the avocado using a fork or in a small blender.

3) Add the mashed avocado to the spinach.

4) Using your hands, massage the avocado into the spinach (add more spinach if you don’t have enough).

5) Add some sea salt and mix.

Method for cooking the salmon:

1) Preheat the oven to 200° (fan oven).

2) Place the salmon on a baking tray lined with tin foil.

3) Place in the oven for 10-12 minutes.
