Cucumber Soup

This may seem like a strange soup but it has such a great taste and it’s a really nice light option for a starter or lunch.

Ingredients:
(Serves 4)

2 Cucumbers

1 Onion

1 Vegetable Stock Cube

250ml Water

200ml Milk (can substitute for almond milk or soy milk if dairy free is required)

1 Tbs of Coconut oil

Pinch of Sea Salt

Method:
I have included two different methods, one for if you own a vitamix and another for if you do not!

Vitamix:

1) Peel the cucumber. Cut down the middle and take out the seeds using a spoon.

2) Cut the onion and cucumber into smaller pieces.

3) Dissolve a stock cube in 250ml of boiling water.

4) Add the onion, cucumber, stock in water and milk to the vitamix.

5) Turn on the hot soup method and blend.

6) Add a tablespoon of coconut oil and a pinch of salt. Bend for 10 seconds.

Serve and Enjoy!

If you do not own a Vitamix:

1) Peel the cucumber. Cut down the middle and take out the seeds using a spoon.

2) Cut the onion and cucumber into smaller pieces.

3) Add one tablespoon of coconut oil to a saucepan. Add the cucumber, cover a cook on a low heat for 15 minutes. Stirring occassionally.

4) To a separate sauce pan add the milk, chopped onion. Bring to the boil and then remove from the heat and leave for 10 minutes.

5) Dissolve a stock cube in 250mls of boiling water.

5) After 15 minutes add the milk and onion mix and the stock in water to the cucumber.

6) Cover and leave to cook for 15 minutes.

7) After 15 minutes blend until smooth using a handheld blender or machine.
