Cauli-Rice

Gluten Free, Wheat Free, Dairy Free, Egg Free

This is a great healthy alternative to rice. Its a low carb option for those who are interested and can be used to bulk up meals! Its really quick and easy to make yourself or you can buy it in supermarkets such as Supervalue or Tesco. If you don’t want to use it all at once you can store it in the fridge and heat it up when required!

Ingredients:
(Serves 2-3)

1 Head of Cauliflower

*Note: You can flavour the cauli-rice by adding spices such as paprika, curry powder, cinnamon, tumeric etc

Method:

1) Cut the cauliflower into smaller pieces.

2) Place in a food processor.

3) Blend until a rice like consistency is reached.

4) Put the cauli-rice into a container that is microwavable. Cook in the microwave for 6-8 minutes. Add salt/pepper/spices to your liking.
(Alternatively you can cook it in a pan for around 10 minutes with a little bit of oil or coconut oil)

Serve with food of choice such as a curry, stir fry or meat in a sauce!
